Happy…Tuesday everyone!! (Not much of a reason to be happy, buuut whatever!) WAIT, what am I saying? There’s always a reason to be happy. Remember that.

As mentioned yesterday, today’s breakfast was a yogurt parfait…I actually spent a bit of time last night dreaming this little baby up (am I a complete dork or what? ….don’t comment on that ;)). Post workout I had another enriching blueberry green’s smoothie, but that didn’t hold a candle too…

is she cute or WHAT? (And may I add, very tasty ;)) the mix was;

  • 1/2 c. + 2 T Liberte non-fat organic strawberry yogurt
  • 1/2 c. Kashi GOLEAN crunch cereal (Almost exactly like granola IMO)
  • Cantaloupe

My morning went pretty well. At the beginning of 3rd period I snacked on a Kashi TLC bar in the “dark chocolate cherry” flavour. (Had to have this flavour after reading about Starbuck’s latest spring drink…CHOCOLATE CHERRY MOCHA. HOLY YUM.) I love every single Kashi product i’ve tried so far, it’s awesome knowing i’m eating something good for me, too.

I forgot to photograph lunch (hahaha so not used to food blogging yet!) but it was simply leftover Pork and Pepper pasta from last night and a honey crisp apple. Also about 3 tortilla chips from a plate Leah was eating. ๐Ÿ˜›

After school I had 3 Darvida crackers (YUM!!) with about 2 tsp almond butter. After that Mom and I headed to Walmart since I have to renew my passport & needed a new photo. I’m heading to NEW YORK CITY at the end of April..ohmygosh, I CANNOT WAIT. SDFNDFKNDGGHFG. I’m sorry to say it’s probably the WORST picture of me ever, LOL!! The photographer did warn that passport photos are NEVER flattering. At least it beats my old picture! (12 years old..rocking a turtleneck sweater..oo baby).

Stopped by the grocery store and I picked up some more Ezekiel english muffins, some more Optimum Slim cereal and my very first jar of ALMOND BUTTER! (The stuff I had before was from a sampler from a bucket at the bulk food store…not real almond butter). Going to try it out tomorrow, I’m quite excited ๐Ÿ˜€ (love me?)

For supper Mom and I made homemade pizzas. (Well, MOSTLY homemade..the crust is a whole wheat thin crust that is store bought..)

On it was:

  • Tomato Sauce
  • Spinach
  • roasted red peppers, onion, mushroom & zucchini
  • low fat mozza cheese
  • crumbled feta cheese

OMMGGG I love homemade pizza. The above picture is from Mom’s pizza but mine looked the same. We each eat 2 pieces (half the pizza…LOL. I don’t care. ๐Ÿ™‚ )

Dessert was identical to yesterdays. A huge mug of tea and some fruit w/ chocolate sauce:

TWO blog posts in one day…OMG. New record. (What was the old one..? Hahaha..oh dear,i’m lame.) I last left you with a picture of my breakfast, which was happily consumed and then I went off to school. My Mom called me during my walk to school to tell me I had a doctors appointment at 11:45. No biggie, had some prescriptions that needed renewing. So went to Astronomy (favourite class of the semester! :)) and then got to miss math due to me having to walk to the appointment (AKA…NO MATH. YESSSSSSSSS.) My friend Leah came with me, as she didn’t want to go to class. (sssh!)

While Leah and I sat down to wait we were both hungry, so I broke out my mid-morning snack staple.. a KASHI GRANOLA BAR.

this one was “seven whole grains & almond”. I bought a box of ’em at Costco that had 3 different flavours (3 boxes!!) for the price of basically ONE. Oh, Costco. I love you. Leah and I shared this bar.

Now is when things turned..not so good. For some reason my doctors appointments are ALWAYS behind. They said i’d be in at 11:45 and didn’t end up being seen until 12:30!! Matt stopped by to get Leah (my friends Leah, Nicki and I always go to our friend Matt’s for lunch) and I was left to wait. By now I was very HANGRY. (Aka, feeling like I want to cry..hungry..cranky…etc.) I finally got to see the doctor, it took her TWO MINUTES to press a few keys and renew my prescription. I was MAD. Thankfully, Matt lived not so far from the office so I booked it down the main road/highway to his house (close to tears. DON’T JUDGE ME) to INHALE my lunch (a salad). No pictures, no time ๐Ÿ™‚ and we all jump into Matt’s car to head back to school. Had one class after lunch then got to go home~ Once the hanger attack passed I was a-okay for the rest of the day. Does anyone else get like that or is it just me…?

After school I made a snack i’m growing to love..I turned to my 2 other best friends;

Kashi GOLEAN crunch cereal & Liberte organic non-fat yogurt in STRAWBERRY. Mixed 1/2 c. of yogurt with a sprinkling of cereal. I also threw in a small apple.

Planning to have a version of this for BREAKFAST tomorrow. ๐Ÿ™‚ I’m trying to eat more varied breakfasts now. Oh, I also had a handful of Quaker Corn Bran squares cereal..not photographed. (I’m a “grazer” when it comes to snack, gotta cut down on that! Makes it hard to photograph everything :P) Also had a HUUUGEEE mug of green tea!

After my snack I took a BATH. Something I haven’t done in ages! It was relaxing. After my bath I started to make supper so it’d be ready for Mom when she got home. (She was home late today).

Last night since we had a pork roast, I made pork & pepper pasta with the leftover pork! This is SERIOUSLY one of my favourite meals. It’s DELICIOUS.

My serving. Also had a whole wheat roll. Went back for seconds…thirds..then picked at some of the unused plain pasta since it had to be thrown away. (What’s portion control?)

Dessert was FRUIT. I love how I crave fruit instead of chocolate, cake, etc…it’s so much more delicious! ๐Ÿ™‚ We had bought a cantaloupe so I cut that baby open and threw in some grapes.

(I ended up drizzling about 2tsp of chocolate sauce over this after the photo was taken. Tee hee.)

Along with some tea in my favourite mug. (I’m a HUGE tea person. I drink it after supper every night without fail.)

Hey everyone! This’ll just be a short post (I plan to blog when I get home).

Today’s monday which means…DOUBLE FREE for me! (First & Last period’s off. AKA, go to school an hour later and get off an hour early). AWESOME. I didn’t have time to blog this weekend due to being pretty busy! As a Tim Hortons employee, I work almost every weekend. Early. I don’t mind morning shifts though! It just means I get off earlier. ๐Ÿ™‚ Saturday was an alright day, and afterwards my friend Evan came over for chicken wings, spinach salad and nachos! Yum! ๐Ÿ™‚

Sunday I was up at 5:50 to get ready for my 7am shift, did one 10 minute trainer video then threw myself together my enriching blueberry greens smoothie and some Liberte fat free strawberry yogurt for my “pre work” snack. Generally I eat my “breakfast” on my first break.

Lately I have NOT been eating enough at work (1st break is usually a bowl of Kashi cereal with a kiwi and a cup of green tea..then nothing until my 2nd break where i’d eat an apple. Suffice to say by the time 3pm rolls around I am HANGRY!!) so this weekend I took extra effort to pack myself a decent MEAL for my 2nd break also. Here’s what Sunday’s food looked like;

Kashi cereal, kiwi (in the small red container) and in the Sobeys bag was leftover spinach salad from Saturday night..with an orange. I felt SO much better after work than when I ate less! MAGIC. ๐Ÿ™‚

My family always has a nice sunday dinner, usually a roast. Last night was a pork roast from Costco with asparagus and roasted potatoes.

oh yeah, did I mention the hollandaise sauce?

I don’t care that it came from a packet. It was delicious. I love this sauce.

I should be heading off to walk to school soon, so i’ll leave you with a picture of breakfast!

The plan.

One word described today pretty well for me…. “TGIF!!”. Even though we had no school Wednesday, this week STILL dragged by for me. Perhaps it’s a mix of classes I dislike (aside from Astronomy! Loving that course right now) and my frustration with having difficulties in chemistry. I decided I wanted to attend University and enter an applied nutrition course, but totally didn’t make the connection i’d need to take math! My post-graduation plan is as follows;

  • Sign up for summer math “upgrading course”. (I made a pretty big mistake when I started highschool…I thought I’d never, in my LIFE need math. Can I go back in time and slap myself now? Basically i’ve taken “foundations” math all through high school [it’s a step below the normal level] and am paying for it now big time. Gotta upgrade that if I want to get into nutrition!
  • Still going to King’s for my first year of University for the Foundation Year Programme, but going to take Biology as my elective course.
  • Planning to leave King’s and transfer to St.FX for my “second” year with my uni. biology course and highschool chemistry 12. Apply for Nutrition.

It looks good when I have it all written out like this..but secretly i’m REALLY nervous. Chemistry and me don’t mix. My brain just doesn’t think very scientifically.. (I’m a writer/photographer. Cut me some slack ;)) I know if I push myself I can do this though! Once I can begin to apply chemistry to food i’m sure it’ll make sense…..plus lots of studying. Yeah, that foreign practice I hear so much about. Might want to try giving that a shot one of these days….

I am DETERMINED, though! (Any RD’s out there? Will I be thankful for forcing myself through all this math/science in the end?)

ANYWAY, On to the good stuff! I’ve accepted that there’s something wrong with my digital camera’s USB cable, so for now i’ll have to settle with crappy cell phone pictures..apologies in advance.

Last night’s Survivor nachos were AWESOME. I’m proud to say I consumed 3/4 of the tray (Mom had the other, er..part). I’m also proud to say the guilt I felt was WAY less than usual–yay for improvement!! ๐Ÿ™‚ My best friend also stopped by and gave me a big surprise… a rose!

isn’t it gorgeous? I gave her a cookie on valentine’s day so she returned the favour~ I love her. ๐Ÿ™‚

BREAKFAST…was not photographed. After my workout I had an enriching blueberry greens smoothie. I have this every morning before breakfast, it consists of

  • 1 1/2 scoops enriching Blueberry greens powder (I just started it recently so I need to wean myself onto it
  • 1/2 a banana
  • 1/2 c. apple juice
  • 1/2 c. frozen mixed berries

My Mom got me hooked on these, they taste wonderful!! I really find i’m feeling better physically, too. (I suffer from a lot of chronic stomach pain for whatever reason..)

Drank my smoothie, hopped in the shower and had a bowl ofย  Nature’s Path Optimum Slim cereal topped with fresh mango. Oh, so delicious.

For lunch I made one of my huge ham&veggie sandwiches. I really need to photograph one of these bad boys soon, they’re so big that the container I put them in squishes it! Also had a jazz apple..delicious!

I was on my own for supper as the ‘rents went out, and I knew exactly what I wanted. A Yves Veggie burger with a whole wheat weight watchers bun topped with 1 wedge laughing cow light cheese and 2 tomato slices. Also a salad and baked SWEET POTATO FRIES!!

I looveees sweet potatoes, and there happened to be a chunk of one calling my name from the fridge! Baked that sucker in the oven at 400F, pam’d a baking sheet, sprinkled the fries with salt&pepper and cinnamon and baked for 25 minutes. ALSO had salad that was leftover from last night’s supper~ (had 2nds of the salad which wasn’t photographed).

Dad stopped by some bakery today and returned with a TRUCK load of goodies. Whoopie pies, a loaf of homemade multigrain bread (i plan to enjoy this before work tomorrow) and an assortment of cookies. I nibbled at a cookie but wasn’t feeling the sugar (It’s so cool how I crave healthy food now!)

So DESSERT ending up being Banana SOFT SERVE! I crave this stuff. It’s FANTASTIC. Using my magic bullet, I made , well..MAGIC happen! Into the cup went;

  • 1 frozen medium banana
  • a splash of skim milk
  • 2 t chia seeds

BLENDBLENDBLEND..topped it with a tiny bit of chocolate syrup ๐Ÿ˜‰ Better than any cookie!

Happy Thursday everyone!ย  I totally forgot to mention that yesterday was the FIRST SNOW DAY OF THE SCHOOL YEAR. Pretty exciting stuff if you ask me. I spent the day accordingly: reading, baking muffins, eating and going to my regular Wednesday night yoga class. Oh, by the way, the muffins are delicious. Check that shizz out. ๐Ÿ˜‰

I spent a good 3 hours during the morning (only breaking to use the bathroom and fetch a glass of water) reading one of the many books I purchased after last month’s Chapters raid visit; “The Road” by Cormac McCarthy. I only have about 1/4 of the book left to read (I read 196 pages yesterday) and must say..what an EXCELLENT BOOK. It’s about a father and son journeying through a post apocalyptic America. Ooooh. The only problem? I have a very vivid imagination, and this book has some…graphic stuff. Well, not graphic to READ, but you get the idea pretty clearly.

Too clearly, apparently, as i’m still feeling sick. Ate pork for supper…yay. I’m tempted to convert to full on vegetarianism now. BUT READ IT. YES. PLEASE DO. IT’S AMAZING; I WILL FINISH IT. I’M JUST A PANSY.

Speaking of supper, I really wish I could upload pictures to my computer…I prepared a lovely looking salad with pork covered in Shake & Bake. (Oh, Shake&Bake..how I love thee).

Breakfast was another Ezekiel English muffin (Of course I WOULD fall head over heels in love with probably the most expensive english muffins ever made…oh well. Too delicious) with MaraNatha peanut butter and Crofter’s superfruit spread in “Asia” flavour. With some mango. Best combination; I find sometimes the simplest things often taste the best ๐Ÿ˜‰

Well I guess that’s all I have to say for now! It’s Survivor Night tonight (GO RUPERT!!) and no amount of nausea will keep me from the nachos Mom always makes. Omg, delicious. My best friend might also be stopping by for a bit! Joy~~~ โค

What size am I..?

After reading Angela’s inspiring blog post this afternoon, I felt really, well, good. Since this is exactly the mindset I find myself falling more and more into each day, and with each new day my self love and appreciation seems to grow and flourish and it’s just so beautiful and AMAZING.

Reading about the “size” issues reminded me of something that happened just last week.. A friend of mine (no names here) showed me a picture of her wearing the prom dress she’d finally decided on this year. (Prom is getting soooo close! I still need to order my dress..!) I told her it looked FANTASTIC and couldn’t wait to see it in person. She smiled but said “it’s not a size 4 though!” I said “What does size matter?” And she said “Well my mom said a size 8 is a super fat size..”

I couldn’t believe it. Who’s MOTHER would force her child into thinking in such a negative way? I assured my friend that she is GORGEOUS and a perfect healthy size just the way she is. Her words still haunt me though.

I am begging to realize that a letter or a number mean little to me. I feel great now and that’s all that should matter. I’m beautiful just the way I am; all woman are.

Pancake Tuesday!

Today was PANCAKE DAY!. What is Pancake day, you ask? Well, Pancake day, to quote, is

Why are pancakes eaten on Shrove Tuesday?

“Lent is a time of abstinence, of giving things up. So Shrove Tuesday is the last chance to indulge yourself, and to use up the foods that aren’t allowed in Lent. Needless to say.. Pancakes are delicious . They’re my FAVOURITE breakfast food. And to celebrate, I whipped up a slightly different version of Jessica’s pancakes ! They were AMAZING.

Strawberry Spelt Pancakes

  • 1 1/2 c. whole grain spelt flour
  • 1 T + 1/4 t Baking Powder (I used a pinch more, like usual ;))
  • 1/2 t cinnamon
  • 1/4 t salt
  • 1-2 T flax (optional, the pancakes weren’t forming at first so I freaked out and chucked in a bunch of flax…logical? Yes. I believe so.)
  • 1 egg
  • 1 1/2 c. skim milk
  • 1 c. sliced strawberries
  • 1 t vanilla extract
  • 1/2 T (2 teaspoons, I learned this tonight :D) Orange zest

In a large bowl, mix flour, baking powder, cinnamon and salt. In a blender mix your milk, strawberries, vanilla, egg and orange zest. Add to your dry mix and stir (add your flax now if you’d like.)ย  Made about 8-9 pancakes.

Jessica also had a recipe for a strawberry banana syrup…which was to DIE for. It was basically 1/4 c. of both strawberries & banana and 3 T maple syrup whipped in my magic bullet. SOOO good.

Embarassingly enough I ate 4 pancakes, probably 2/3c. maple beans, a small chunk from a ham steak….and a cup of tea. I can eat so much! It always surprises people.

I think half the issue here is I eat SO fast. Mom says it’s just me bent over my food and inhaling..hahaha! I need to learn to slow down and learn how to portion control. Does anyone have any tips?
